Care for the Caretaker? 

I've been informed by my loving family that I'm not allowed to go anywhere at all except doctors appointments until I gain weight, period.

On a bright note, the bronchitis has eased up a bit, and fever is gone. It's interesting to compare my progress with my hubby. My family may complain about the "weird sh--" I've been taking & doing, but I tell you, as compared to the standard stuff he's been using, he looks rougher shape than me right now from all it's side effects. The poor guy...I'm trying to not stress him at home, but who can really care for the caretaker?

He's supposed to go on a religious retreat on Sunday too...I don't see how he's going to do anything! I'm not sure if it's a good idea for him to go anywhere either. But... he needs it. I can't be greedy and keep him all to myself. He needs a break from me. And...I don't want to rely on him - or anyone - so hard, but what can I do?

Almost there... 

I got very good news today. The doctor says in two weeks time I will have completed my parasite treatment. Shortly afterward, I should begin to see the weight loss stop, then slowly increase, as my intestines repair. Good thing too - my parents and hubby were really scared (I'm down to 92 lbs now). Hubby was so happy to hear the news, he picked me up and danced, singing "I'm getting my wife back...". Say a prayer, cross your fingers and toes, and all that good
stuff for me!

Bread for the Hungry? 

I have been shopping the local farmers market for food over the past few weeks. The experience is like nothing I have had before. As dumb as it sounds, many of the veggies & herbs I have had in the past... I never knew what they actually looked like fresh out of the ground! And the flavor....much better. The price for organic is cheaper too. I get up early to get the best stuff.

The one thing I can't get there is a loaf of bread. There are bakers there, yes, but even the specialty stuff isn't useful to me. Find a loaf with no gluten, yeast, egg, dairy or sugars. One thing I miss the most is a decent loaf of bread! Argh!

Currently I eat Ener-g's Yeast & Gluten Free Rice Loaf, and if you've ever tasted it, you'd know it's about as tasty as edible cardboard! But hey, it is better than NOTHING. The only place I seem to know selling a good loaf on the net is all the way out in Ireland (http://www.mulligans-bakery.com/gluten-free-products.html), and they don't deliver here I bet. I've tried baking loaves myself, and have sucessfully gotten them to rise with baking soda and unbuffered vitamin c crystals, but the bread is not sturdy enough to make a sandwich with. For grains, I've used rice, millet, quinoa, amaranth, teff, tapioca, buckwheat - I personally can tolerate oats too for now I think, though I hear it isn't gluten free.

I'm sure there's a market for this - for people with allergies, asthma, even autism and attention deficit disorder...I see tons of posts looking for good recipes, but often they are complicated and time consuming.

Can't someone out there help fill this niche?
